Only 3 ingredients: making boba pearl from scratch!

It was my first attempt making boba pearl from scratch and it’s satisfying good and chewy. Only needs three ingredients (tapioca starch, dark brown sugar and water) and lots of patience 🙂
Prepare your own milk tea base, green tea base, dark tea base or just fresh milk and pour them into a cup filled with your homemade boba pearl in dark sugar syrup! 🙂
The pearl is good for a day so prepare them in the morning and enjoy it for the rest of the day. It turns less chewy if kept in fridge overnight.
INGREDIENTS (good for 4 servings):
For making boba pearl:
1. 1/4 cup water
2. 45g dark brown sugar
3. 110g tapioca starch
For braising syrup:
1. 1 cup water
2. 90g dark brown sugar
METHODS:
For making boba pearl:
1. Sieve the tapioca starch and set aside.
2. In a pot, add sugar and water, heat up to boil.
3. Once the sugar has melted, turn the heat to low and add tapioca starch.
4. Stir them over low heat for 3-4 minutes to cook the dough. It will be a dry dough as shown in the picture.
5. Place the warm dough on a working surface and let it cool down slightly.
6. Cut and roll them into tiny balls as shown in the picture below.
TIPS: Cover the dough with a wet cloth and take bit by bit out to work on them to prevent drying. If the dough is too dry, add a little bit of water.
7. Boil a big pot of water. Once the bottle boil, place the boba pearl into the pot and stir continuously to prevent sticking. Once the pearl float to the surface, stir occasionally.
8. Cook the pearl for 20 minutes and check on them. They should be cooked by now.
9. Transfer the cooked pearls into a bowl of ice cold water around 15 minutes to prevent them from cooking further.
For braising the pearl with syrup:
10. Prepare the braising syrup by boiling the water and sugar.
11. Once the sugar melted, add the boba pearl into the braising syrup and simmer them for 20 minutes, stirring them continuously to prevent them from burning.
12. Once the syrup thickens (as shown in picture), remove from heat and keep warm.
13. To assemble the milk tea, add the pearl and its syrup to the side of the glass and let it slide down to create a nice design on the glass.
14. Then add some ice and pour in your favourite drink base and enjoy them cold.

The tapioca sugar dough. It looks a bit dry but it is fine. If it is hard to shape, add some water to them.

In a big pot, boil the pearl until it is cooked. Takes around 20 minutes for mine.

As the syrup thickens, it is done. Keep warm.
