
| INGREDIENTS (Make 6 pieces): |
| 1. 300g of all purpose flour |
| 2. Some boiling water (1/3) plus some cold water (2/3) |
| 3. 3 stalks of scallion (cut the green part into small pieces) |
| 4. Oil |
| 5. Salt to taste |
| METHODS: |
| 1. In a weighing bowl, place 300g of all purpose flour. |
| 2. Separate the flour into 1/3 and 2/3. It does not need to be precise. |
| 3. Put some boiling water in the 1/3 flour and give it a quick mix using a chopstick or fork. |
| 4. Do the same with the 2/3 but using room temperature water. |
| 5. Mix all the flour together and roll them into a dough. |
| 6. Let the dough rest for 20 minutes. |
| 7. Using a rolling pin, roll the dough out into a big circle (around 2mm thickness). |
| 8. Brush the surface with a layer of oil and sprinkle some salt on it. |
| 9. Next, place the chopped scallion on them. |
| 10. Roll them up. |
| 11. Cut it into 6 equal pieces. |
| 12. Take each piece, squeeze their ends to ensure that the scallion doesn’t fall out, then roll them into a long roll. |
| 13. Twirl them into a circle (see attached photo). |
| 14. Let it rest for 5 minutes. |
| 15. Using a rolling pin, roll them into a flat circle. |
| 16. In a cooking pan, add oil and pan fried them. |
