INGREDIENTS: |
1. A bunch of kailan |
2. Half a clove of garlic (minced) |
3. A handful of anchovies (fried) |
4. Some oyster sauce and salt (to taste) |
METHODS: |
1. Separate the stalks with the leaves. |
2. Remove the fibrous outer part of the stalks and set aside. |
3. Cut the leaves into thin stripes. |
4. In a pot of boiling water, blanch the stalks. Then remove from water. Set aside. |
5. In a wok, heat up oil. Once the oil is hot enough, place the leaves into the oil and fry them until the leaves turn into dark green. TIPS: Once the leaves turn dark green, remove them. The kailan leaves will still cook a bit more after removed from heat. |
6. Sprinkle the crispy kailan leaves with some salt. |
7. In another wok, place a little oil. Then add in the minced garlic, give the stalks a quick stir fry and add some oyster sauce. |
8. Sprinkle some anchovies on the kailan and it’s done. |
